Korean Tofu pancake (dubu jeon) are a great example of a delicious snack or side dish and that is easy to cook!A nd is a great option if you want to skip eating meat for a day :). Today we will prepare together small tofu pancake with a lot of vegetables. Let’s get started!
Ingredients for 12 pancakes (2/3 people)
- 1 pack of firm tofu (18 oz or 500 grams)
- 1/2 cup of flour (60 grams)
- 2 eggs
- 1 small onion
- 1 green pepper
- 1 carrot
- 1 small zucchini
- 1 red chilli pepper
- 2 teaspoons of salt
Instructions
- Rinse the tofu under running water and dry with a paper towel
- Chop all the vegetables (except the red chilli pepper)
- Mash the tofu using your hands
- Put the vegetables and the tofu in a large bowl
- Add the eggs, the flour and the salt. Mix everything well
- In a frying pan, heat 1 spoon of oil
- Pour a spoon of the mixture in the frying pan, flat it a bit using the spoon and make a circle shape
- Slice the chili pepper and add 1 slice on each pancake
- Fry on both sides until golden brown
- Serve the tofu pancake with the dipping sauce. For the dipping sauce: mix 2 spoon of soy sauce, 1 spoon of apple vinegar, 1 ts of chili powder and 1 ts of roasted sesame seeds
